I eat a lot of tofu and tempeh. I have avoided the powder form after hearing that the process is not beneficial and maybe harmful. The same process that makes cereal. Have you heard that?

For some reason I thought whey was gluten. Seitan, right? Thanks for clarifying, Ashllyn.
